About This Recipe
Inspired by the Australian original, this pale ale is clean, hoppy and endlessly drinkable. Based on the Coopers DIY Australian Pale Ale kit, this recipe takes that classic base and enhances it with additional late hops for more aroma.
Ingredients
- 1x Coopers DIY Australian Pale Ale Kit
- 1kg brewing sugar
- 20g Centennial hops (T90 Pellet) — dry hop
- 15g Citra hops (T90 Pellet) — dry hop
- 1 packet Gervin GV12 Ale Yeast (upgrade from kit yeast)
- Carbonation drops
Method
- Prepare kit per instructions — dissolve malt extract and brewing sugar in hot water, top up to 23L.
- Pitch Gervin GV12 yeast. Ferment at 18–21°C for 5–7 days.
- Dry hop with Centennial and Citra in a nylon straining bag for 3–4 days.
- Check gravity with hydrometer, then bottle with carbonation drops.
- Condition 10 days. Serve cold and drink fresh.
Brewer's Notes
Upgrading from the kit yeast to Gervin GV12 gives noticeably better attenuation and a cleaner flavour profile. The dry hop turns a good kit beer into something genuinely craft-quality.
