Frequently Asked Questions

Which wine yeast should I use?

It depends mainly on the wine style and how much sugar you're fermenting. Reds generally want a strain that boosts colour and tannin extraction; whites want something that protects delicate aroma compounds; sparkling and Champagne bases need a neutral, high-attenuating strain. If your must is going above 14% potential ABV, check the strain's alcohol tolerance first — use the filter above to browse by style.

What's the difference between wine yeast and bread yeast?

Bread yeast is bred for fast CO2 production in dough, not fermentation character. It typically has low alcohol tolerance and produces off-flavours at wine-relevant sugar levels. Dedicated wine yeasts are bred for higher alcohol tolerance, cleaner sensory profiles, and reliable flocculation (settling out clearly).

Do I need a high-alcohol-tolerant wine yeast?

Only if your starting gravity is high enough to push the finished ABV above your yeast's tolerance. Standard wine strains in our range top out around 14–15%; for fortified wines, dessert wines from very ripe fruit, or strong mead, choose a high-tolerance strain like GV4, MJ SN9, Bulldog Bayanus or EC-1118.

Does wine yeast need nutrient added?

Most strains benefit from it, and some (marked \"High\" nitrogen requirement, e.g. MJ CR51, MJ VR21) need it to avoid stalling or off-flavours. Low-nitrogen strains are more forgiving but still ferment cleaner with a modest nutrient addition.
