Why Adjuncts Deserve More Respect

The word "adjunct" sometimes gets a bad reputation — conjuring images of industrial lagers bulked out with cheap corn or rice. But for the home brewer, adjuncts are a genuinely powerful toolkit. Whether you're chasing the pillowy mouthfeel of a NEIPA, the silky smoothness of an oatmeal stout, or the peppery bite of a rye saison, unmalted and minimally processed grains can do things that base malt alone simply cannot.

This post is aimed at brewers who already understand the basics of mashing and fermentation and want to push their recipes further by understanding why different adjuncts behave the way they do — and how to use them confidently.

The Science Behind Adjunct Grains

Most adjuncts lack the enzymatic activity of fully malted barley. That means they can't convert their own starches into fermentable sugars without help. When you add them to your mash, you're relying on the diastatic power of your base malt to do the heavy lifting. Practically speaking, this means:

  • Keep your base malt at a high enough proportion — typically 60–70% minimum — to ensure full conversion
  • Extend your mash time slightly (75–90 minutes) when using high adjunct loads
  • Consider a cereal mash for raw, ungelatinised grains like flaked maize or raw wheat
  • Check your iodine conversion test carefully — adjunct-heavy mashes can stall

The key starch gelatinisation temperatures vary by grain: oats gelatinise at around 55–60°C, wheat at 52–64°C, and rye somewhat lower. Most standard mash temperatures (65–68°C) cover these adequately when using pre-gelatinised flaked versions.

Oats — Mouthfeel and Softness

Flaked oats are arguably the most popular adjunct in modern home brewing, largely driven by the NEIPA craze. They contribute:

  • Beta-glucans — long-chain polysaccharides that increase viscosity and give that thick, almost oily mouthfeel
  • Proteins — which contribute to persistent haze when combined with hop polyphenols
  • A subtle creamy sweetness — without pushing up fermentable sugar levels significantly

Usage rates of 15–25% work well in hazy styles. Beyond 30%, you risk lautering difficulties and excessive starch haze that won't clear regardless of finings. Golden naked oats (husked varieties) offer a slightly more refined, less muddy character and are worth experimenting with in lighter styles.

Wheat — Haze, Head Retention and Structure

Wheat is one of the most versatile adjuncts available. Malted wheat is easier to work with and contributes clean protein haze and excellent head retention. Unmalted or flaked wheat pushes haze further and is a staple of Belgian witbier and German hefeweizen recipes.

  • Use 30–50% wheat malt in a hefeweizen or witbier for authentic character
  • Flaked wheat at 10–20% in a NEIPA supports the protein-hop haze matrix
  • Torrified wheat is excellent purely for head retention at lower rates (5–10%)
  • Rice hulls are your friend when running a high-wheat grist — add 5–10% to prevent a stuck sparge

Rye — Spice, Dryness and Complexity

Rye is the most characterful of the common adjuncts — and the most demanding. It contributes a distinctive peppery, spicy dryness that pairs beautifully with certain hop profiles (earthy, herbal) and yeast characters (phenolic saison strains, for instance).

  • Keep rye below 20% to avoid an almost gel-like mash that's nearly impossible to lauter
  • Always use rice hulls when brewing with rye
  • Malted rye is significantly easier to work with than flaked rye
  • Try a ryePA or rye saison — rye's dryness counterbalances residual sweetness beautifully

Flaked Barley and Flaked Maize

Flaked barley is a classic in dry Irish stouts — it contributes a dry, slightly grainy body and excellent head retention without adding sweetness. Use at 10–15% alongside roasted barley for an authentic result.

Flaked maize (corn) lightens body and colour while keeping fermentability high — historically used in American lagers and pre-Prohibition ales. At 10–20%, it produces a noticeably crisper, drier finish without thinning mouthfeel to the point of wateriness.

Practical Tips for Adjunct Brewing

  • Always weigh adjuncts carefully — small percentage shifts matter more than you'd expect
  • Crush flaked grains lightly or not at all — they're already pre-gelatinised and fragile
  • Use a false bottom or voile bag to help with lautering in sticky, high-adjunct mashes
  • Recirculate (vorlauf) for longer before running off — adjunct mashes tend to produce cloudier wort initially
  • Adjust your water chemistry: adjuncts dilute the overall protein and mineral content of your wort, so recalculate additions based on the full grain bill
