Kegging Your Homebrew: A Complete Guide to Cornelius Kegs, Carbonation & Serving

Why Make the Switch to Kegging?
If you've been brewing for a while, you'll know the quiet dread of bottling day — sanitising 40-odd bottles, priming with sugar, capping, labelling, and then waiting another two to three weeks before you dare crack one open. Kegging changes all of that. Once you've moved to a Cornelius keg system, you'll wonder why you didn't do it sooner.
- Speed: Transfer your beer to a keg, seal it, and it's ready to force carbonate within 24–48 hours.
- Consistency: No bottle-to-bottle variation in carbonation levels.
- Reduced oxidation risk: A purged, pressurised keg is one of the best ways to protect hop-forward beers like NEIPAs and pale ales from oxygen exposure.
- Less sanitising faff: One vessel to sanitise rather than dozens.
That said, kegging does require upfront investment and a little knowledge to get right. Let's break it all down.
Understanding the Cornelius Keg
The Cornelius keg (or "corny keg") was originally used by the soft drinks industry and has been adopted wholesale by home brewers worldwide. They come in two main post configurations:
- Ball lock — the more common type among home brewers; the gas and liquid posts are slightly different sizes, making it impossible to accidentally swap them.
- Pin lock — older Coca-Cola kegs; less common but still compatible with standard CO₂ systems.
Most home brewers in the UK opt for ball lock. A standard 19-litre (5-gallon) corny keg holds roughly 33 pints — a very respectable batch size. You'll also find 9.5-litre (2.5-gallon) mini kegs if space is tight.

Setting Up Your Kegging System
At its core, a keg system needs four things:
- Cornelius keg — clean and pressure-tested
- CO₂ cylinder — a 2 kg cylinder is a sensible starting size for most home brewers
- Dual-gauge regulator — one gauge shows cylinder pressure, the other shows serving/carbonation pressure
- Beer line and tap — typically 3/16" ID beer line and a standard picnic tap or through-the-door kegerator tap
You'll also want to keep a stock of keg lube (food-grade silicone grease) for the O-rings, and replacement O-ring sets — they're cheap and worth having on hand.
Keezer or Kegerator? Choosing Your Cold Storage
Your keg needs to be kept cold — ideally between 3–5 °C for most styles. There are two popular options:
- Kegerator: A converted upright fridge with a tap tower through the door or top. Neater aesthetically, but can be harder to fit full-size corny kegs in some domestic fridges.
- Keezer: A chest freezer fitted with a temperature controller (such as an Inkbird ITC-308) run at fridge temperatures. More capacity, easier to fit multiple kegs, and generally cheaper to buy second-hand.
A chest freezer with an Inkbird controller and a wooden collar (to mount the taps) is the most popular setup among serious home brewers in the UK for good reason — it's flexible, cost-effective, and you can fit two or three kegs side by side.
Force Carbonation: Two Methods
Once your beer is in the keg and the headspace purged with CO₂, you have two main approaches to carbonation:
The Slow & Set Method
Set your regulator to your desired serving pressure (typically 10–12 PSI for most ales and lagers at 4 °C) and leave the keg for 5–7 days. The CO₂ will gradually dissolve into solution at the correct level. This is the most hands-off method and produces very consistent results.
The Quick Carbonate Method
Set your regulator to 30 PSI, lay the keg on its side, and roll or rock it for 5–10 minutes. This dramatically increases the CO₂ contact surface area. Then reduce to serving pressure for several hours before pouring. This can get you pouring in under an hour, though results can be slightly less even if rushed.

Balancing Your Beer Lines
One of the most overlooked aspects of home kegging is line balancing — getting the resistance in your beer line to match your serving pressure, so you pour without excessive foam or flat pours.
- 3/16" ID beer line provides roughly 3 PSI of resistance per foot (≈ 0.9 metres)
- At a typical serving pressure of 12 PSI, you need approximately 4 feet (1.2 m) of line to balance the pour
- If your beer is pouring too foamy, lengthen the line; if it's slow and flat, shorten it
Temperature is a significant factor too — a warmer keg requires higher serving pressure to maintain the same carbonation level, which then demands longer line to balance. Keep things consistent and the maths works in your favour.
Achieving Clarity on Tap
Kegged beer can still be hazy if you're not careful about transfers. A few tips:
- Cold crash your fermenter to 1–2 °C for 48–72 hours before kegging to drop yeast and haze particles
- Use gelatine or Biofine Clear finings in the fermenter before cold crashing
- Transfer via a closed, CO₂-purged transfer to minimise oxygen pickup — this is especially important for NEIPAs
- The first pull from a new keg will often be cloudy — discard half a pint and the rest should pour clear
Keg Maintenance & Cleaning
Cornelius kegs are durable but need proper cleaning between batches:
- Rinse with hot water immediately after emptying
- Fill with a sodium percarbonate (PBW-style) solution and leave for 30–60 minutes, then rinse thoroughly
- Inspect O-rings on the lid, posts, and poppets — replace annually or at first sign of cracking
- Sanitise with Star San or a no-rinse sanitiser before filling; pressurise with CO₂ to check for leaks using a spray bottle of Star San
