How to brew

Dissolve 1.3kg of sugar in 2-3 litres of hot water, add the softened malt, top up to 23 litres at 20-25°C and add the yeast. Ferment for about 10 days at 20-25°C and bottle once the hydrometer reads 1007 or less, with a teaspoon of sugar per 500ml bottle (or 120g in a keg). Leave warm for two weeks, then move somewhere cool to clear.

JAMES HAMMOND

I hadn't realised it was rated at 5.5ABV, so had only shopped 3 x 1 kilo of sugar for my 3 monthly brews. So i brewed it with 1 and not 1.5 kg. it was a decent beer, brewed well and cleared quickly once in the barrel, but not to my taste. An awful review really since I altered the instructions.
