The Better Brew Hedgerow Wine Kit gives you every ingredient except the fruit and sugar to make 23 litres of fruit wine from your garden or the hedgerows. It comes with 17 recipes, from apple and blackberry to sloe, elderflower and even birch sap.

What's in the kit

  • Wine yeast and nutrient
  • Enzyme - stops pectin from causing a haze
  • Citric acid - to adjust acidity when fruit is ripe and less acidic
  • Bentonite - helps clear the wine
  • Stabiliser - lets you keep the wine for more than a few weeks
  • Two-part finings (Finings A and B) to remove yeast at the end
  • Instructions with 17 recipes

Recipes included

Apple, pear, strawberry, raspberry, blackberry, cherry, blueberry/cranberry, elderberry, elderflower, gooseberry, currant, sloe, plum, grape, rosehip, birch sap and dandelion. Most recipes use 4.5-6kg of sugar plus the fruit.

How it works

Dissolve the sugar in 10 litres of boiling water, add the prepared fruit and the enzyme, then top up to 23 litres. Add the yeast once it's 30°C or below and ferment for about two weeks. Strain off the fruit, stabilise, fine, rack and bottle.

Allergens: contains sulphites and a product of crustacea (chitosan finings). You'll need a 25 litre fermenter with airlock and a straining bag; finish with a twin lever corker and corks.

Frequently Asked Questions
What is a hedgerow wine kit?

It's a base kit for making country wine from fruit you pick or buy, giving you up to 23 litres.

Do I need to add anything?

Yes - you add your own fruit, plus sugar and water as per the recipe in the instructions.

What fruit can I use?

Most hedgerow fruits work - blackberries, elderberries, sloes, damsons and plums are popular choices. Follow the kit recipe for quantities.

What equipment do I need?

A fermentation vessel with an airlock, a hydrometer, a syphon, and bottles with corks. Sanitise everything that touches the wine - ChemSan is a no-rinse sanitiser (2ml per litre, 2 minutes' contact), or use VWP as a cleaner/steriliser and rinse afterwards.

Is there a smaller version?

Yes - the 6 Bottle Wine Starter Pack With Hedgerow Kit includes the demijohns and equipment for a smaller batch.
