Upgrading your yeast

For a soft, everyday-drinking red like this, try Mangrove Jack's CR51, bred specifically for light, fruity reds meant for early drinking — a direct match for this style. If your fermenting spot runs cold over winter (an unheated garage or utility room, often under 15°C), Lalvin EC-1118 is the more reliable choice, as it won't stall in the cold.

Frequently Asked Questions
How many bottles does it make?

It makes 30 bottles (23 litres) of wine. See our guide to how many bottles a kit makes.

Is it really ready in 7 days?

Yes, at a steady 18-22°C - it ferments over about 5 days, then clears with the finings and is ready to bottle and drink by day 7. It improves further with 2-4 weeks in the bottle.

What does it taste like?

A soft, rounded red with a lively bouquet of plum, blueberry and hints of blackcurrant - juicy and easy to drink.

Do I need to add sugar or anything else?

No added sugar is needed - Cellar 7 kits include the concentrate, yeast, finings, stabiliser and nutrient. It's ingredients-only, so you'll need your own fermenter, airlock, hydrometer, siphon and 30 bottles.

Does it contain allergens?

Yes - the stabiliser and finings contain sulphites, and one of the finings contains chitosan from crustaceans, so it isn't suitable for vegans or anyone with a crustacean allergy.

Can I upgrade the yeast?

Yes - Mangrove Jack's CR51 is bred for light, fruity, early-drinking reds. In a cold garage or utility room (under 15°C), Lalvin EC-1118 is more reliable.
