Protafloc Tablets (Irish Moss) are a tabletted carrageenan product added to the wort in the kettle during the last 15 minutes of the boil. They dramatically enhance protein removal as the wort cools, resulting in significantly clearer beer with improved head retention.
Use half a tablet per 23-litre batch. Add with 15 minutes remaining in the boil. Protafloc works by causing proteins to coagulate and precipitate out during cooling — it's one of the most effective and widely used kettle finings available.
