Deep red amber ale in a glass with a creamy head

How to Brew a Welsh Red Ale at Home

What Is a Welsh Red Ale?

Welsh Red Ale is a distinctive style in its own right — an amber-to-deep-red beer characterised by a rich malt backbone, gentle hop bitterness, and a satisfying depth of flavour. It draws on the tradition of British ale brewing but with a character all of its own: biscuity, slightly caramelised, and deeply satisfying.

If you've tried Tiny Rebel's CWTCH — arguably the most famous Welsh Red Ale — you'll know exactly what we're talking about. CWTCH is brewed with six malts and two US hops, and it's won numerous awards. Happily, you can now brew your own CWTCH at home with the official Tiny Rebel home brew kit, available at Brewco.uk.

Brew Your Own CWTCH: The Easy Way

The Tiny Rebel CWTCH Welsh Red Ale kit (3kg, makes 36 pints) is a premium home brew kit that lets you recreate this award-winning beer at home. It includes everything you need to make the wort — all the complex malt character of six different malts is already baked in.

Pair it with a Gervin GV12 Ale Yeast for a clean, full fermentation, and use your standard home brew setup to ferment and bottle.

Brewing Your Own Welsh Red Ale from Scratch

If you want to build your own Welsh Red Ale recipe, the malt bill is the key. A typical grain bill might include:

  • Pale Malt as the base (60–70% of grain bill)
  • Crystal Malt (15–20%) — adds the classic toffee and caramel sweetness that defines the style
  • Dark Crystal Malt (5–10%) — deepens the colour and adds dried fruit complexity
  • A small amount of chocolate or roasted malt (optional) for depth

Hops for a Welsh Red Ale

Welsh Red Ales aren't heavily hopped — the malt is the star. A moderate bitterness addition at the start of the boil and a small late addition for aroma is all you need. Good choices include:

  • Target — a British bittering hop that works perfectly with malt-forward beers
  • Willamette — earthy and floral for a gentle aroma addition
  • For a modern twist, a small late addition of Centennial adds a touch of citrus brightness

Fermentation and Conditioning

Ferment at 18–20°C using Gervin GV12 Ale Yeast for 5–7 days. Red ales benefit from a little extra conditioning time in the bottle — aim for 2–3 weeks before drinking. The caramel malt flavours will round out beautifully as the beer matures.

Use beer finings if you want a clearer finish, and bottle with carbonation drops for consistent carbonation.

Dych chi'n Barod? (Are You Ready?)

Whether you go for the official Tiny Rebel CWTCH kit or build your own recipe from scratch, a Welsh Red Ale is a brilliant brew to add to your repertoire. Rich, malty, and deeply satisfying — it's a proper pint.
