Crystal malt (also called caramel malt) is a fully-modified specialty malt that adds caramel and toffee sweetness, a fuller body and a golden-to-amber colour to your beer. Because the grain is stewed before kilning, the sugars caramelise - so it can be steeped or mashed without affecting conversion.
- Flavour: caramel, toffee, light honey sweetness
- Colour: golden to deep amber
- Typical use: 5-20% of the grain bill
- Great in: pale ales, amber ales, IPAs, stouts and porters
