Phoenix is a British dual-purpose hop with an unusual mix of chocolate, molasses, pine and spice. A seedling of Yeoman, it was released in 1996 and gives a well-balanced, rich bitterness that suits darker ales.
Hop profile
- Origin: UK, developed at Horticulture Research International, Wye College
- Alpha acid: around 8-12% (British Hop Association)
- Aroma: chocolate, molasses, pine, floral and lightly spicy
- Type: dual purpose: bittering and late hopping
How to use it
Use it for bittering at the start of the boil, or try it as a late hop - the British Hop Association notes brewers have had interesting results that way. Alpha acid changes from crop to crop, so check the figure on your pack and scale your recipe with our Hops Alpha Adjustment calculator.
Who it's for
Brewers of porters, stouts, dark milds, bitters and English ales who want a hop that sits well alongside roast and caramel malts. T90 pellets are the standard form for home brewing - consistent, easy to weigh and easy to store. Keep the opened pack sealed and cold; our hop storage guide explains how.
