About This Recipe
Bright, golden, refreshing and easy-drinking — a British-style golden ale is the perfect summer brew. Light malt character, gentle bitterness, and a floral, citrus aroma make this one of the most approachable beers you can brew at home.
Ingredients
- 2.6kg pale malt extract
- 150g Pale Caramalt (Thomas Fawcett)
- 20g Target hops (T90 Pellet) — 60 min
- 20g Centennial hops (T90 Pellet) — 10 min
- 15g Citra hops (T90 Pellet) — flameout
- 1 packet Gervin GV12 Ale Yeast
- ½ Protafloc tablet — 15 min
Method
- Sterilise all equipment.
- Steep pale caramalt in 3L at 65°C for 30 min. Remove and bring to boil.
- Dissolve malt extract. Boil 60 minutes with hop schedule above.
- Cool to below 25°C, top up to 23L, pitch yeast. Ferment at 18–20°C.
- After 5–7 days, add beer finings for a brilliantly clear golden beer.
- Bottle using carbonation drops. Condition 10–14 days. Serve well chilled.
Brewer's Notes
Keep malt additions light — the goal is a pale, straw-golden colour. Over-hopping will mask the delicate malt character. This beer is best drunk fresh while the hop aroma is at its peak.
