What is a demijohn used for?
A demijohn is the traditional vessel for home winemaking and country wine — a narrow-necked jar that holds a batch of must or wine while it ferments and clears. The narrow neck keeps the surface area of the liquid small, which limits oxygen exposure during the long secondary fermentation and ageing stages that wine needs (unlike beer, which is usually only in a wide-necked fermenter briefly). Demijohns are also used for cider, mead, and secondary fermentation of any 4.5–6 litre batch.
Glass or PET demijohn — which is better?
Both work well. Glass is the traditional choice, doesn't scratch, and is easier to sanitise thoroughly — but it's heavy and can break. PET plastic, like this one, is lightweight, shatterproof, and much easier to handle when full, though it scratches more easily over time and eventually needs replacing. For a first demijohn, or if you're nervous about breakages, PET is the easier choice.
