How to brew it

  1. Clean and sanitise your kit - ChemSan is a no-rinse sanitiser.
  2. Warm the pouch in hot water for 15 minutes, pour the malt into the fermenter and rinse the pouch out.
  3. Add 3 litres of boiled water and 1kg of brewing sugar, stir to dissolve, then top up to 23 litres with cold water.
  4. At 20-25°C add the yeast, fit an airlock and leave for 14 days.
  5. Bottle once your hydrometer reads 1008 or below, priming with a level teaspoon of sugar per 500ml bottle. Keep warm for 5 days, then move somewhere cooler to clear.

Be patient in week two: the yeast works slowly towards the end, so check with a hydrometer rather than waiting for the airlock to stop. For a bit more body, try adding some crystal malt. Great for real-ale drinkers after a traditional northern bitter. See the Better Brew range.
