Chit malt is a barely malted barley from Crisp: it is steeped like normal malt but kilned after only a very short germination. Added in small amounts, it improves foam, head retention and mouthfeel - especially in lagers. This 1kg bag comes crushed.
Key features
- Rich in high molecular weight proteins that build a stable foam and better head retention
- Adds mouthfeel and body
- Very light in colour, so it will not darken pale beers
- More friable than raw barley, so it mills and mashes easily
- Supplied crushed and ready to mash
Specs
- Weight: 1kg, crushed
- Type: speciality malt (not a base malt)
- Colour: very pale
- Diastatic power: low
- Typical use: up to 10% of the grist
- Great in: lagers, pilsners, pale ales and IPAs
How to use
Mash it alongside a base malt such as Lager (Pilsner) Malt or Maris Otter, using up to 10% of the grist. Its own enzyme power is low, so it relies on the base malt for conversion.
Who it's for
All-grain brewers chasing a crisp lager with a lasting white head, or anyone whose beers lose their foam too quickly.
