DWB Water Salts are a ready-formulated blend for treating your brewing water (liquor) before an all-grain brew. They adjust calcium levels and add chloride and sulphate, so you can shape the body and bitterness of your beer without buying several separate salts.

What DWB does

  • Adjusts calcium in your brewing water
  • Adds chloride, which gives a fuller, rounder palate
  • Adds sulphate, which brings out drier, more bitter flavours
  • Lowers pH during mashing and the boil, which helps the malt enzymes work
  • Helps unwanted proteins drop out in the kettle, hop back or whirlpool

Used for: A ready-mixed blend of calcium sulphate, calcium chloride and salt to 'Burtonise' water for pale ales and bitters, and lower mash pH.

When: Before mashing - into the grist or mash liquor.

Step by step
1Get a water report and pick the target for your beer style.
2Work out the dose - about 2g per 23 litres (9g per 100 litres raises calcium 15.6ppm, chloride 15.4ppm, sulphate 32.1ppm).
3Stir into the grist or mash liquor, or split with the sparge.
4Don't add to the hot liquor tank - some of it won't dissolve.
Good to know: Too much makes beer taste minerally or salty - test your water first.
