Magnesium Sulphate (Epsom salts) is a key brewing water salt, added in small amounts to adjust the mineral profile of your mash and sparge water. It supplies magnesium - an important yeast nutrient - and sulphate, which sharpens and accentuates hop bitterness for crisper, drier beers.
