Flaked barley is unmalted barley that has been pre-gelatinised for use directly in the mash. It adds a dry, grainy body and is the traditional adjunct for Irish dry stout - improving head retention and giving that characteristic silky, full mouthfeel without adding sweetness or colour.

- Typical use: 5-20% of the grain bill
- Great in: Irish dry stouts, pale ales and any beer needing improved head retention
