Mangrove Jack's M21 Belgian Wit is a traditional top-fermenting dried ale yeast for witbier and other Belgian-style speciality beers. It balances fruity esters with warming spice phenolics.
What it brings to your beer
- A good balance of fruity esters and spicy, phenolic warmth
- Leaves some sweetness in the finished beer
- Low flocculation, so the beer stays cloudy for longer, but it will drop bright if left long enough
- Suits Witbier, Grand Cru, spiced ales and other speciality beers
Specifications
- Type: top-fermenting ale yeast

A good pick for brewers making a hazy, orange-and-coriander style wit, or for adding Belgian character to a pale wheat beer. For a German hefeweizen with banana and vanilla instead, see M20 Bavarian Wheat.
