Ideal for crisp, fresh dry white/blush wines and all sparkling wines — and the best strain for high alcohol tolerance. CL23 produces very low levels of fusel oils and other congeners during fermentation, so it contributes little flavour or aroma of its own and can be considered a particularly neutral, clean fermenter. It does, however, contribute significantly to the wine's structure, and ferments sugars out completely, allowing the driest of wines to be made.
CL23 is noted for its robustness: it ferments up to 18% ABV and tolerates high free SO2 and other stress factors such as organic acids and imperfect temperature or pH. That makes it the strain of choice for high-alcohol wines, uncertain recipes where fermentation reliability is key, or low-temperature fermentation down to 8°C (46°F).
