Young's Campden Tablets (100 pack) are sodium metabisulphite tablets that protect fruit must and finished wine or cider from spoilage and oxidation. They also remove chlorine from tap water before brewing, which makes this larger pack handy for regular brewers.
What they do
- Help stop wild yeasts and bacteria in fruit must before you add your own yeast
- Protect finished wine and cider from oxidation and spoilage
- Remove chlorine from tap water, which can otherwise cause off-flavours in beer
- Pre-measured tablets, so there is no weighing
Dose
- Wine and cider: 1 tablet per gallon
- Removing chlorine from brewing water: half a tablet per 23 litres
Crush the tablet and dissolve it in a little water or juice before adding (see the How to Use box).
Who it's for
Wine, cider and beer makers who brew often. For stabilising a finished wine before sweetening, use them with potassium sorbate. Making fruit wine? Add Young's Pectolase too. Brewing less often? The 50 tablet pack may suit you better.

Wait
24 hours
before adding yeast
Used for: Sterilises fruit must, protects wine and cider from oxidation and bacteria, and removes chlorine from tap water.
When: Must: 24 hours before the yeast. Wine/cider: at racking and just before bottling.
Step by step
1Crush the tablet(s) to a powder and dissolve in a little warm water, must or wine.
2Must: 1 tablet per gallon (4.5 litres), cover loosely and wait 24 hours before adding yeast.
3Finished wine or cider: 1 tablet per gallon at racking or bottling.
4Chlorine in tap water: half a tablet per 23 litres, left 24 hours.
Good to know: Adding yeast before the 24 hours are up badly slows fermentation. Contains sulphites - avoid breathing the fumes. No more than about 3 tablets per gallon over the wine's whole life.
Frequently Asked Questions
How many Campden tablets per gallon?
One crushed tablet per gallon (4.5 litres) - at the start in the must, and again at racking or bottling.
How long do I wait before adding yeast?
24 hours. Add the yeast too soon and the sulphite will badly slow the fermentation.
Do they remove chlorine from tap water?
Yes - half a tablet per 23 litres, left for 24 hours.
Will Campden tablets stop fermentation?
Not on their own. To stop a finished wine re-fermenting after sweetening, use a Campden tablet together with potassium sorbate (wine stabiliser).
