How to Make Low-Alcohol Beer at Home: A Complete Brewer's Guide

Low- and no-alcohol beers have shaken off their old reputation, and more brewers than ever want a genuinely good pint they can enjoy mid-week or all afternoon without the after-effects. The good news is that brewing low-alcohol beer at home is entirely achievable — but it is not simply a case of using less. Get it wrong and you end up with something thin and watery; get it right and you will have a beer with real body, aroma and drinkability at a fraction of the strength.

First, know your targets (UK definitions)
Before you brew, it helps to know what you are aiming for. In the UK, the labelling terms are legally defined:
- Alcohol-free: no more than 0.05% ABV
- De-alcoholised: no more than 0.5% ABV
- Low-alcohol: no more than 1.2% ABV
- Session beer: an informal term, usually around 2.5–3.5% ABV
The lower your target, the more technique matters. Reaching a genuine 0.5% at home is difficult; brewing a characterful 1–3% session beer is very achievable for any home brewer.
How alcohol is actually made — and how to make less of it
Alcohol comes from yeast eating fermentable sugars and producing ethanol and CO₂. The rough formula brewers use is:
ABV ≈ (Original Gravity − Final Gravity) × 131.25
So there are only two levers: put fewer fermentable sugars into the wort in the first place, or stop the yeast before it converts them all. Every method below is a variation on one of those ideas — plus a third, more advanced route of removing alcohol after fermentation.
Technique 1: Lower your original gravity
The most straightforward approach is to start with a thinner wort — use less malt extract or grain, or brew a normal batch and top up with more water, so your original gravity lands around 1.010–1.020 instead of the usual 1.040–1.050.
The catch is that a low-gravity wort ferments out to a thin, characterless beer. On its own this gives you weak alcohol and weak beer — which is why it works best combined with the body-building tricks further down.
Technique 2: Mash hot to leave sugars behind (all-grain)
This is the single most useful lever for all-grain brewers. During the mash, beta-amylase (most active around 60–65°C) produces highly fermentable maltose, while alpha-amylase (most active around 68–72°C) produces larger, unfermentable dextrins.
Mash high — 72–78°C — and you deliberately favour those unfermentable dextrins. The yeast cannot ferment them, so less sugar becomes alcohol, and those dextrins stay in the beer as body and mouthfeel. This is how you brew something low in strength that still feels like a proper beer.
Technique 3: Use a low-attenuating or maltose-negative yeast
Your choice of yeast has a huge effect. Standard yeasts are efficient and chew through nearly every sugar available. For low-alcohol beer you want the opposite:
- Low-attenuating strains leave more residual sugar behind, capping the final alcohol.
- Maltose-negative yeasts (such as Saccharomycodes ludwigii) ferment simple sugars like glucose and fructose but cannot ferment maltose — the main sugar in wort — producing authentic beer character with very little alcohol, often under 0.5%.

Technique 4: Arrested (stopped) fermentation
Instead of limiting the sugars, limit the time the yeast has to work. Pitch as normal, monitor the gravity closely with a hydrometer, and as soon as it drops just enough to hit your target ABV, crash-chill the beer to near 0°C to send the yeast dormant, then rack it off the sediment.
A related professional method is the cold-contact process: the wort is held cold and only briefly exposed to yeast, developing character while almost no alcohol forms. Both take practice — stop too early and you get a sweet, green (undeveloped) flavour — but they give fine control over strength. Technique 5: Boil (or evaporate) the alcohol off
Because ethanol boils at around 78°C — below water — you can gently heat a finished beer to drive some off. Hold it at roughly 78–80°C for a period, cool, then re-carbonate.
Be realistic about the trade-offs: heat also drives off delicate hop and malt aromas, and you will need to re-carbonate afterwards. Commercial breweries do this cleanly with vacuum distillation and reverse osmosis; at home it is a blunt instrument, best kept for robust, hop-forward styles.
Do not forget body: how to avoid thin, watery beer
Low alcohol almost always means low body, so build it back deliberately:
- Mash hotter (Technique 2) to retain dextrins.

A critical warning: sanitation and shelf life
This matters more for low-alcohol beer than almost anything else. Alcohol is a preservative — with very little of it, your beer is far more vulnerable to spoilage bacteria and wild yeast. So:
- Sanitise everything, ruthlessly — stock up from our cleaning and sanitising range.
