SafAle T-58 is a Fermentis speciality ale yeast with a strong fermentation character, giving intense fruity and phenolic flavours, especially banana, clove and pepper. Reach for it when brewing Belgian-style ales, wheat beers and spiced beers.
Character
- Fruity and spicy, with banana, clove and peppery notes
- Suits English and Belgian-style ales and wheat-based beers
- Medium sedimentation; forms a powdery haze if disturbed

- Temperature: 18-26°C
- Apparent attenuation: 72-78%
- Alcohol tolerance: 9-11%

How to use
Pitch directly onto the wort at fermentation temperature, or rehydrate in ten times its weight of sterile water at 25-29°C for 15-30 minutes. Store sachets below 24°C for up to 6 months, or below 15°C for longer. Once opened, reseal, keep at 4°C and use within 7 days.
It pairs well with English hops such as Challenger or Fuggles for a British-Belgian crossover. For a fruitier, fuller-bodied Belgian yeast see SafAle S-33, or browse the Fermentis yeast range and our beer yeast selector.
