SafLager S-23 is a bottom-fermenting lager yeast originally from Berlin, Germany. Fermentis recommends it for fruitier, more estery lagers, with a good length on the palate, so it suits brewers who want a lager with a bit more character than a very neutral strain.

Character

  • Fruity, estery lager profile
  • Works well in hoppy lagers
  • Fast sedimentation for clearer beer

Fermentis specification

  • Pack: 11.5g sachet
  • Type: bottom-fermenting lager yeast
  • Temperature: 12-18°C
  • Apparent attenuation: 80-84%
  • Alcohol tolerance: 9-11%
  • Dosage: 80-120g per hectolitre, so allow two 11.5g sachets for a 23 litre batch

How to use

Sprinkle onto wort at or above fermentation temperature, or rehydrate in ten times its weight of sterile water at 15-25°C for 15-30 minutes before pitching. Store sachets below 24°C for up to 6 months, or below 15°C for longer. Once opened, reseal, keep at 4°C and use within 7 days.

Use it in European lagers and pilsners alongside Saaz or Tettnanger hops and German Pilsner malt. For a cleaner, more neutral lager, try SafLager W-34/70. Browse the Fermentis yeast range or compare every beer yeast we stock.
