Simcoe® (T90 Pellet) is a multi-purpose American hop bred in Yakima, Washington State and released in 2000. It has a unique and highly valued aroma profile of pine, passion fruit, and earthy citrus, alongside high alpha acids that make it excellent for bittering. One of the cornerstone hops of the American craft beer revolution.

What do Simcoe hops taste like?

Simcoe is pine-forward with passion fruit, apricot and an earthy-citrus backbone — sometimes described as "dank". It's the signature resinous note of classic West Coast IPA, with enough fruit to work in hazy styles too.

How should I use Simcoe hops?

Anywhere in the schedule. At 12–14% alpha it's an efficient 60-minute bittering hop, but its character really lands in whirlpool and dry hop additions — 30–50g per 23L dry hopped alongside Citra or Mosaic is a proven IPA formula.

What can I substitute for Simcoe hops?

There's no perfect match, but Chinook covers the pine and grapefruit side, while a Simcoe role in a blend can be approximated with Chinook plus a fruity hop like Mosaic.
