Upgrading your yeast
For a crisp, dry white like this, try Mangrove Jack's CL23 — a clean strain built for fresh dry whites with reliable high alcohol tolerance. If you can ferment somewhere genuinely cool (a cold porch or unheated spare room, under 15°C), Lalvin K1V-1116 pulls out noticeably more of those floral, fresh-fruit aromas.
