Why Don't Supermarkets Sell Wine Yeast?
Supermarkets stock baking yeast — fast-acting strains bred for making bread rise, sold in small sachets in the baking aisle. That's not the same product, and it's not a substitute. Wine yeast is a completely different category, sold by specialist home brewing suppliers rather than general grocery retailers, which is exactly why a Tesco or Asda search for it comes up empty.
Can You Use Baking Yeast to Make Wine?
Technically, baking yeast will ferment sugar into alcohol — but it's a poor substitute for a few reasons:
- Low alcohol tolerance — most baking yeast strains stall out around 8–10% ABV, well short of what a proper wine needs to ferment fully dry.
- Off flavours — baking yeast is selected for CO2 production and dough rise, not flavour neutrality, and can leave a distinct bready or yeasty taste in the finished wine.
- Poor clarity — wine yeasts are bred to flocculate (clump together and drop out of suspension) cleanly at the end of fermentation. Baking yeast often doesn't, leaving you with a persistently cloudy wine that's difficult to clear.
It'll technically produce something alcoholic, but if you want a wine that actually tastes like wine, a proper wine yeast strain makes a genuine difference.
What Makes Wine Yeast Different?
Wine yeasts are specific strains of Saccharomyces cerevisiae (or, for high-alcohol styles, Saccharomyces bayanus) selected and bred specifically for winemaking: higher alcohol tolerance, cleaner flavour profiles, reliable flocculation, and — depending on the strain — particular characteristics suited to red, white, sparkling or fruit wines. A few common strains, in case you've seen the names before:
- Lalvin EC-1118 — the workhorse "champagne yeast," high alcohol tolerance (up to 18%), very clean and neutral, good for sparkling wines, ciders, and restarting stuck fermentations.
- Lalvin 71B — softens harsh acidity, popular for fruit and young red wines.
- Gervin varieties — a UK-focused range with strains suited to specific styles, from light whites to full-bodied reds.
