What's Available & What Each Does
Fermentation Aids
- Yeast Nutrient (100g / 500g) — Provides nitrogen, vitamins, and trace elements that yeast needs to ferment cleanly and fully. Essential for fruit wines and high-gravity brews where natural nutrients may be lacking. A must-have for preventing stuck fermentations.
- Pectolase (32g) — A pectic enzyme that breaks down pectin in fruit wines, eliminating pectin haze and producing a brilliantly clear result. Add before fermentation begins. Critical for any wine made from fresh fruit or juice.
- Young's Super Wine Yeast Compound (60g) — An all-in-one wine treatment containing yeast, nutrient, pectolase, and citric acid. Simplifies winemaking — just add to your must and ferment.
Clarifying & Fining Agents
- Bentonite (100g) — A natural clay fining agent that removes haze-forming proteins from wine and cider. Add to the fermentation vessel and stir vigorously to hydrate before use. Produces excellent clarity.
- Young's Wine Finings (23L) — A two-part isinglass and kieselsol fining combination for rapid clearing of home made wine. Used after fermentation is complete.
- Young's Beer Finings (23L) — Isinglass-based finings specifically formulated for home brew beer and lager. Produces a brilliant, crystal-clear finished beer.
- Beer Heading Liquid (50ml) — Improves and stabilises the head on home brew beer. Add a small amount to the bottle or barrel — particularly effective with lagers and lighter ales.
- Protafloc Tablets (10s) — Irish Moss — A kettle fining used during the boil in all-grain brewing. Helps proteins coagulate and drop out during fermentation for improved beer clarity.
Preservation & Stabilisation
- Campden Tablets (50s / 100s) — Sodium or potassium metabisulphite tablets used to sterilise equipment, prevent oxidation, and stabilise wine and cider before bottling. One of the most versatile and widely used home brew additives.
- Sodium Metabisulphite (100g) — The powdered form of the same active ingredient as Campden tablets. Useful for making sterilising solutions and treating large volumes of equipment.
- Fermentation Stopper / Wine Stabiliser (30g) — Potassium sorbate. Prevents refermentation in sweetened wines and ciders. Always use alongside a Campden tablet for complete stability.
- Wine Sweetener (50ml) — A non-fermentable liquid sweetener for adjusting the sweetness of wine and cider after fermentation without causing refermentation.
Acid Adjustments
- Citric Acid (100g) — Adds sharpness and balances sweetness in fruit wines and meads. Also used as a mild sanitising agent and to adjust must acidity.
- Malic Acid (50g) — The dominant acid in apples. Used in cider making to restore natural acidity, and in fruit wines for a fresh, crisp character.
- Tartaric Acid (50g) — The primary acid in grapes. Used in wine kits and grape-based wines to balance flavour and maintain freshness.
- Precipitated Chalk (50g) — Calcium carbonate. Used to reduce excessive acidity in wines and ciders that are too sharp. Add in small increments and taste.
- Wine Tannin (50g) — Adds structure, astringency, and complexity to red wines and country wines made from low-tannin fruits. Also acts as a natural preservative.
Water Treatment
- Calcium Sulphate Gypsum (100g) — A brewing water treatment that enhances hop bitterness and dryness in ales. Particularly useful in all-grain brewing for water chemistry adjustment.
