About the Wine Styles
- Australian Grenache Shiraz Mourvèdre — Blackberry, dark chocolate, and spice. Dry, full-bodied, and complex.
- California Chardonnay — Approachable and versatile with fresh green apple, pear, and a clean finish. A classic all-rounder.
- California Pinot Noir — Strawberry, cherry and earthy notes. Light-medium body, dry, medium oak. 12.5% ABV.
- California Riesling — Crisp and dry with fresh green apple, citrus, and stone fruit notes. Clean and refreshing.
- California Shiraz — Bold and fruit-forward with ripe dark berry, spice, and a warm finish.
- California Vieux Chateau du Roi — A Californian take on a southern Rhône blend. Full-bodied with dark fruit, spice, and structure.
- California Viognier — Aromatic and floral with peach, apricot, and a lush, medium-bodied finish.
- California White Zinfandel — Off-dry with cherry and strawberry, light body. Hugely approachable.
- Chilean Cabernet Sauvignon — Classic Cab with blackcurrant, cedar, and firm tannins. Dry and full-bodied.
- Chilean Sauvignon Blanc — Crisp and refreshing with gooseberry, citrus, and a clean, dry finish.

Tips for Best Results
- Ferment reds at 20–22°C, whites at 16–18°C for best varietal expression
- Allow wines to clear fully before bottling — don't rush this step
- Reds especially benefit from 2–3 months of bottle conditioning
- Store finished wine in a cool, dark place for longer ageing potential
